Hazard Analysis and Critical Control Point, or HACCP for short, describes a safety system for the food industry. The risk management system which was originally designed for NASA is based on the analysis of all potential hazards in a production process. The HACCP concept is used to identify potential microbiological, chemical and physical hazards as early as the production stage and eliminate them by appropriate measures.
