Why is broccoli considered to be so healthy?
Brocolli is a very healthy food. Meanwhile, even the media is reporting on this. This cabbage belongs to the family of the cruciferous plants. In addition to broccoli this also includes e.g. cauliflower, red cabbage, white cabbage kohlrabi, cress, radishes and horseradish. It is characterized by its phytochemicals – the yellow plant pigment quercetin and glucoraphanin. After the broccoli has been eaten the glucoraphanin is converted into sulforaphane, with the help of the enzyme myrosinase. Myrosinase is also contained in broccoli. This causes the typical cabbage smell and taste. The conversion process continues in the intestine with the help of intestinal bacteria. Glucoraphanin can be found in a very high concentration in the broccoli seeds of the variety Brassica oleracea.
Sulforaphane can not be absorbed to a great extend only through the consumption of broccoli
Even those who eat plenty of broccoli will be disappointed, on the basis of the fact that broccoli nowadays, does not provide the body with too many nutrients. This is based on the newer cultures of broccoli that do not contain a lot of glucoraphin. Often, the valuable ingredients in broccoli are destroyed by storage, by deep freezing and by cooking. The reason for that is the enzyme myrosinase, which is very sensitive. It converts glucoraphanin into the active ingredient sulforaphane. It can already be destroyed by cooking broccoli at 40 degrees celsius. For this reason, broccoli would have to be eaten raw in order to absorb a large amount of the valuable ingredients. Quercetin is also reduced by storage and in production processes. Therefore, cooking also destroys most of the quercetin.

The scientific rationale: Broccoli seeds contain a concentration of glucoraphanin (the mustard oil glucoside) that is 10 to 100 times higher than that found in mature broccoli or green broccoli florets. By using the seed extract, just one capsule provides you with the concentration of valuable plant compounds that would otherwise require you to consume enormous amounts of raw vegetables.

The principle in detail:
- Glucoraphanin is the inactive storage form (the precursor).
- Myrosinase is the biological activator (the enzyme found in horseradish).
- Sulforaphane is the finished, highly biologically active mustard oil. Only when the capsule comes into contact with fluid in the body does the enzyme ‘unlock’ the precursor, and the valuable sulforaphane is produced fresh and intact exactly where it is to be absorbed.
The stability issue: Free sulforaphane is a highly reactive molecule and extremely unstable when exposed to air. In a standard capsule, it would break down within a very short time and lose its properties. Dr Wolz’s principle of ‘fresh activation’ (precursor + enzyme separated within a capsule) is the way to reliably supply the body with stable, high-dose sulforaphane.
The synergistic effect: Quercetin is a valuable polyphenol (secondary plant compound) found in onions and apples, amongst other things. In nature, mustard oil glycosides and flavonoids are often found together. Dr Wolz specifically supplements the broccoli seed extract with quercetin in order to provide the body with a holistic, plant-based complex modelled on nature.
Digestibility: No. The typical bloating experienced after eating cabbage is caused by the hard-to-digest fibres (such as raffinose) and sulphur compounds contained in the vegetable, which are fermented by bacteria in the large intestine. As Broccoli Extract + Active Enzyme is a highly pure extract concentrate, it does not contain these indigestible fibres. The product is therefore extremely gentle on the stomach and intestines.
